Summery, High Fibre Greek Salad

Greek salad is one of the nicest, most refreshing summer salads. Cucumbers are cooling and hydrating, cherry tomatoes are sweet and refreshing, feta cheese is... delicious! And add some high fibre brown rice and chickpeas for a complete, nutritious, vegetarian low-glycemic meal. Add some red onion, oregano, and olive oil for a super immune system...and of course for incredible flavour. And though this salad may not exactly be a traditional Greek Salad, it is no less traditional than a Greek salad made with iceberg lettuce. But they're all delicious!
Ingredients
1 cup brown rice, cooked
1/2 cucumber, chopped
10 cherry tomatoes
1 cup chickpeas (rinsed, drained)
1/8 red onion, finely sliced (not pictured...sorry)
2 tsp. oregano (not pictured)
2 tbsp. olive oil
Juice from half a lemon
salt and pepper to taste
Directions
1. Place brown rice, chickpeas, tomatoes and cucumber in a bowl. Top with red onion and oregano.
2. In a separate bowl, whisk olive oi, lemon, salt and pepper. Pour over salad.
3. Mix well.
