Mixed Berry Jam with Chia seeds, no sugar added

One of the hard things about doing any kind of elimination diet is giving up our comfort foods. Last year I did a one week Paleo diet challenge and that was hard for me because I love bread. It was only one week, but no bread for one week is a lot for me. As my sugar detox is coming up in a couple of weeks, I decided to make a jam that is allowable on the detox...just so I can continue eating my PB&J! And let me tell you, it's a lot easier to make and eat a sugar-free jam than it is to find bread with no added sugar. The mixed berry jam is nice and tart and after a few PB&J sandwiches with this jam, regular jam will taste way too sweet! Your taste buds adapt. Aside from adding fibre and omega-3s, the chia seeds in the recipe also help to solidify the jam a little, instead of the sugar. The bread in this picture (also allowed on the sugar detox) is Stonemill Honest Wellness Sprouted Rye & 12 Grains bread. It's not gluten-free (GF) so obviously not suitable for those on GF diets, but of course you can enjoy the jam on GF crackers, bread, etc.
3 Simple Ingredients
- 2 cups fresh or frozen berries
- 3 tablespoons chia seeds
- 1/4 cup water (approx)
3 Simple Steps
1. Place berries and water in small to medium saucepan on medium heat.
2. Simmer for around 20 minutes stirring often. Add chia seeds and continue to stir for a few minutes.
3. Take saucepan off heat and let cool. Transfer into a glass jar and when cooled, place in fridge. Leave in fridge for at least one hour for a more solid consistency.
